Should humans consume mercury?

While my husband and I were walking the beach at Camano Island, Washington we observed a huge sign by the Department of Fisheries that warned about the toxicity of mercury and whales. In some recent studies, the levels of mercury found in the meat of whales and dolphins were much higher than researchers expected.

It is known that fatty fish, including salmon has high levels of mercury.

Mercury toxicity in humans does exist.

Some healthcare providers question the safety of mercury fillings, mercury found in vaccinations, and mercury that is found in some fatty fish, especially salmon. In fact, women are strongly advised to avoid fatty fish during pregnancy.

The legal mercury limit is 1 part per million set by the Food and Drug Administration. But, the allowed level of mercury in the U.S. is double that of Canada (.5ppm), Europe (.5ppm), and Japan (.4ppm). It appears that other countries have more concern with mercury toxicity than our government.

In part, this is because the research around mercury is not definitive. However, some studies suggest it is a neurotoxin. Even the suggestion that this may be the case should cause concern and extreme caution around eating alot of fatty fish.

It's true that fish, especially fatty fish, has many health benefits because of the high content of omega 3 fatty acids.

Why are these fatty acids so beneficial?

There are many reasons but the 2 biggest reasons is that they contribute to optimal function of your brain and heart.

Omega 6 to Omega 3 fatty acid ratio

In the past any fat was a four letter word. But it is important to note that not all fat is created equal and that a healthy diet includes eating fat.

Knowing the right mix of fats can be challenging but not impossible. There is no doubt that the typical American diet has way too many omega 6's and not enough omega 3's. This contributes to much of what is ailing America. Some experts say the ideal ratio should be 2 to 1. In the U.S. because of the consumption of processed foods and meat that is grain fed the ratio is much higher than that (20 to 1).

What is the problem with eating a diet with a higher ratio of omega 6's to omega 3's?

It is well known that this causes poor functioning of your immune system. Problems with immune systems are at the root of many chronic health conditions that are prevalent in developed countries.

Many things contribute to an abundance of omega 6 fatty acids including:

  • Eating grain fed beef that is raised on large commercial farms with very little room to roam
  • Eating lots of processed foods that contain trans fats.
  • The widespread use of hydrogenated fats because of their stability and economy
  • Use of margarine in place of butter
  • Misuse of vegetable oils

All of these factors contribute to a high level of omega 6's to omega 3's.

Getting more omega 3's in your diet is very important. The highest source is found in fatty fish. Unfortunately, the levels of mercury in fatty fish continues to increase. A highly purified, pharmaceutical grade fish oil supplement is the logical solution.
